Introduction

A vegetarian diet has been advocated by everyone from philosophers such as Plato and Nietzsche, to political leaders such as Benjamin Franklin and Gandhi, to modern pop icons such as Paul McCartney and Bob Marley.  Science is also on the side of vegetarianism.  A multitude of studies have proven the health benefits of a vegetarian diet to be remarkable.

A vegetarian menu is a powerful and pleasurable way to achieve good health.  Based on a wide variety of foods from plant sources, vegetarian eating patterns are satisfying, delicious, and healthful.  Those who include dairy products and eggs in their diets are called lacto-ovo vegetarians.  Vegans (pure vegetarians) eat no meat, fish, poultry, eggs, or dairy products.  While there is a considerable advantage to a lacto-ovo vegetarian pattern, vegan diets are the healthiest of all, reducing risk of a broad range of health concerns.
